Iwaca was born in 1963, but the story of I'Tal Wadadaly starts with Loni Brooks, Iwaca's mother, who was born in 1933 in Sidia Farm, Antigua. At 14 she met Iwaca's father and moved to St. John's to start her business, cooking for the people. When he was 6 years old Iwaca began to help in his family's business. At age 15 he takes the vow of Ras Tafari. I'tal cooking was developed by Ras Tafari people and its name means vital. I’tal cooking uses all natural ingredients and draws flavors from herbs, spices, and coconut milk. Iwaca met his wife Theresa in the US Virgin Islands 1988 and moved to California in 1989 to have their first daughter, Italia who was born that year. At the time, the family lived in Santa Cruz and Iwaca started a business called Rasta Pocket. They also ran a restaurant on Mission called Zabid where Iwaca develop many of his recipes. Soon Iwaca’s food was available in local stores like New Leaf, State Market, and others. After that, Iwaca moved his family to New Mexico to expand his business and continue his journey. In 1997 they moved to Davis, and Iwaca started working at the Co-Op and continued growing his catering business. In his 7 years at the Co-Op Iwaca brought many new flavors to the the people of Davis. In 2003 Iwaca began working with Lee at the Delta of Venus, where Iwaca brings exciting and healthy flavors to the people. I’tal Wadadaly is available at the DOV, weeknights from 5:30 -10pm. I'tal Wadadaly also caters Parties, Weddings, and events.
